The 12-15 lb Jerk Turkey Survival Guide: How to Order, Reheat, and Serve Thanksgiving's Best Bird
Posted by PENNY
Thanksgiving 2026 is Thursday, November 26-and the ordering deadline is only about six weeks away.
Side of the Road Jerk Chicken is now taking holiday orders for smoked jerk whole turkeys, 12 lb to 15 lb each, for $80 + tax each. These are authentic jerk whole turkeys smoked on a wood-powered grill, and each one is accompanied by a side of your favorite BBQ sauce.
Orders must be placed by November 18, 2026, and ordering is available ONLY on our website: kays.kitchen. Pickups are scheduled for November 21-24. With Thanksgiving landing on November 26, this is a time-sensitive holiday order announcement, and the deadline is coming up fast.
Whether you are hosting in Daytona Beach, gathering elsewhere in Volusia County, or traveling from Orlando or Jacksonville, this is the year to replace the dry, predictable oven-roasted turkey with something smoky, seasoned, and unforgettable.
What You Get for $80
Your $80 + tax jerk turkey order includes:
- One smoked jerk whole turkey, 12 lb to 15 lb
- A side of your favorite BBQ sauce
The turkey is prepared in the Side of the Road Jerk Chicken tradition: bold Jamaican seasoning, smoky outdoor cooking, and the kind of generous portion that makes guests ask where you got it.
Our approach is rooted in traditional Jamaican preparation over pimento wood. That smoke brings a deep aroma and savory flavor to the turkey while the jerk seasoning adds the signature combination of spice, herbs, and heat.
This is the same commitment to real flavor that began with our roadside cooking roots. We started cooking on the side of the road, and we still believe food should taste like someone cared enough to do it properly.

How to Store the Turkey Before Thanksgiving
If you are not serving the turkey immediately after receiving it, keep it refrigerated according to the directions provided with your order.
A few simple storage rules will help protect the flavor and texture:
- Keep the turkey chilled until it is time to heat it.
- Store it in a leak-proof container or pan.
- Keep the artisan BBQ sauce refrigerated until serving.
- Do not leave the turkey sitting at room temperature for more than two hours.
- If the room or outdoor temperature is above 90°F, limit unrefrigerated time to one hour.
- Keep the turkey separate from uncooked foods.
For additional food-safety guidance, refer to the USDA’s recommendations for handling cooked turkey.
How to Reheat Jerk Turkey Without Drying It Out
The goal is to warm the turkey gently while protecting the smoky flavor and moisture. Your order includes heat-up directions, so use those instructions as your primary guide. These general tips can help you plan your kitchen schedule.
1. Give yourself enough time
Do not wait until guests are already arriving to start reheating. Plan for the turkey to warm gradually, then allow it to rest before carving.
The exact timing will depend on how the turkey is packaged, how cold it is, and the equipment you use. The most important test is temperature, not appearance.
2. Use a covered pan
Place the turkey in a roasting pan or oven-safe dish and cover it according to the included directions. Covering the bird helps hold in moisture and prevents the outside from becoming dry before the center is hot.
You can add a small amount of water or broth to the pan if recommended by the included instructions. Avoid flooding the turkey; you want gentle moisture, not a boiled bird.
3. Reheat gently in the oven
Use an oven temperature of at least 325°F unless the included directions tell you otherwise. Heat the turkey until the thickest portions reach 165°F on a food thermometer.
Check the thickest breast, inner thigh, and inner wing area while avoiding contact with the bone. A thermometer is more reliable than color, texture, or the phrase “looks hot.”
4. Let it rest before carving
Once the turkey is hot, let it rest for about 20 minutes before carving. Resting gives the juices time to settle and makes the meat easier to slice.
Keep the artisan BBQ sauce on the side or drizzle it over the carved meat just before serving. That lets guests enjoy the jerk flavor on its own while adding extra tang and sweetness where they want it.
Do not reheat the whole turkey repeatedly. Slice only what you expect to serve, and refrigerate the remaining meat promptly.
How to Carve and Serve It
For a clean presentation, place the turkey breast-side up on a sturdy cutting board with a rim to catch the juices. Use a sharp carving knife and a carving fork.
Start by removing the legs. Cut through the skin between the leg and body, pull the leg outward, and separate it at the joint. You can serve the drumsticks whole or separate the thigh meat from the bone.
Next, remove the wings at the joint.
For the breast meat, make a horizontal cut near the base of the breast. Then slice downward along one side of the breastbone, following the ribs until the breast section releases. Slice the breast meat crosswise into even pieces.
Arrange the platter with a mix of white and dark meat. Add the drumsticks and wings around the slices for a generous, family-style presentation.
Serve the turkey with traditional sides such as rice and peas, steamed cabbage, sautéed kale, macaroni and cheese, or plantains. Our coconut rice is a natural match for smoky Jamaican-seasoned turkey.

How Many People Does a 12-15 lb Turkey Feed?
A 12-15 lb whole turkey is a strong centerpiece for a big extended-family gathering. As a general planning estimate, expect it to serve approximately 10 to 12 people, depending on appetites, side dishes, and how much you want left over.
You may stretch it further when serving several sides and additional proteins. If your guests are serious meat lovers, or you want generous leftovers, build a larger holiday spread instead of relying on the turkey alone.
That is where our other signature offerings come in.
Build a Bigger Friendsgiving or Holiday Spread
A jerk turkey is an excellent centerpiece, but it does not have to carry the entire meal. For Friendsgiving, office parties, family reunions, or larger celebrations, add a combination of Jamaican and Texas-style favorites:
- Signature jerk chicken: Add a classic option for guests who love authentic Jamaican flavor. Explore our bulk jerk chicken quarters.
- Jerk wings: Great for grazing before dinner, especially for game-day gatherings and casual Friendsgiving parties. Our catered jerk wings are available in bulk quantities.
- Texas-style beef brisket: Add a rich, slow-cooked option for guests who want a different kind of smoky comfort food. See our Texas-style beef brisket.
- Caribbean sides: Coconut rice, greens, cabbage, and other sides round out the table with color and flavor.
This combination works especially well for a crowd with different tastes: jerk turkey for the centerpiece, jerk chicken and wings for Jamaican food fans, and Texas beef brisket for anyone craving slow-smoked beef.
